From Waterford, Jess graduated from Trinity College Dublin with a BSc degree in Biochemistry. This training gave her the ability to understand our bodies in great detail. After 5 years working as a freelance cook in England and France, she completed her post graduate qualifications in Nutritional Therapy with Middlesex University, England and is now a member of the professional association of Nutritional Therapists of Ireland.
She runs private nutrition consultations in the Cork and Waterford regions and has a keen interest in nutrition education. She also has two years experience teaching parents and their children with emotional and behavioural problems to cook nutritious food. During this time she developed a Healthy Eating Curriculum which was integrated into the national curriculum of the schools in the London Borough of Hammersmith. She currently lectures with the College of Naturopathic Medicine and regularly gives talks and cookery demonstrations nationwide.
Her personal journey discovering the power of good nutrition started 15 years ago. Stress, foreign travel and a low protein diet all contributed to ill health. Embracing some simple dietary changes, she addressed her fatigue and allergies, and a few years later, nutrition helped to alleviate an array of digestive issues. She has always been a sports enthusiast and currently runs and practises yoga to keep fit.
Consequently, her areas of special interest include digestive health, child health, immunology, cancer care, and athletic performance/sports nutrition.

I grew up on a farm, my father grows apples and my mother makes the tastiest apple juice in Ireland (www.irishapplejuice.com). This influence is almost certainly why I love cooking and wanted to learn about the body in great detail. So now my career allows me to bring my two passions: food and the body, together. Using this information I love seeing people achieve their health goals and enjoy life. My up-bringing has also instilled some strong beliefs about the foods that we eat; I encourage people to buy the freshest, most wholesome, locally produced foods.
